1 Medium Orange

3 1/2 Cups White Sugar

8 Cups RhubarbDiced

1/2 Cup Water

1 Cup Raisins
Directions
I have fond memories of enjoying this on fresh toast during week-long stays at Grandmas. Delicious! Credit goes to Grandma Redekopp for this recipe.

Squeeze the orange into a small bowl - set juice aside. |

Slice reuid thinly & simmer in 1/2 Cup of water until tender (15 mins). Remove from heat. |

Combine orange juice, raisins, sugar, and rhubarb. Let stand 30 mins. |

Place back on the heat and boil until thick, about 30-40 mins. Stir often. |

Add orange peel, boil until you have reached the jam stage. Stir often. |

Remove from heat and skim. Pour into a jar and enjoy! Good on toast, ice cream, cake filling, pie, and so on (although toast is my favorite). |
